После успешного создания заказа я хочу получить данные о заказе / клиенте в формате CSV / XML и загрузить их на удаленный FTP. Является ли это возможным?

Да, это возможно. Но вместо вызова AJAX со страницы статуса заказа рекомендуется использовать Shopify Веб-перехватчики. Для вашего конкретного сценария вам нужно прослушать веб-перехватчик Order Create. Каждый раз, когда создается новый Заказ, вы получите полезную нагрузку в обработчике веб-перехватчика, которая будет содержать информацию о Заказе и Клиенте.
